The National Meat Inspection Service (NMIS) is designated as the sole national controlling authority.
LRMEs are slaughterhouses, meat processing plants, poultry dressing plants, meat cutting plants, and cold storages allowed to operate by local government units but are not accredited by NMIS.
NMIS Meat Inspectors are responsible for accredited slaughterhouses.
Local Meat Inspectors are accountable for daily collection and recording of slaughter and condemnation data for locally registered meat establishments and accredited slaughterhouses and must submit reports to Provincial Veterinary Offices and NMIS Regional Offices monthly.
Carcass refers to the fresh meat of any slaughtered animal after bleeding and dressing with the offals removed from the body.
Number of animals slaughtered/dressed and their destination, live weight of animals slaughtered/dressed, carcass/dressed weight of animals, and the number of animals/carcasses condemned including primal parts.
Daily recording is required; however, the daily slaughter report is submitted monthly to Provincial Veterinary Offices and City Veterinarian Offices every 15th of the month after the reference month.
